Easy Nourishing Nightly Recipe

Ingredients

  • 8 cups (packed) kale leaves*

  • 1 tbsp extra virgin olive oil

  • ¼ tsp salt

  • ¼ tsp pepper


    for the quinoa

  • 1 cup quinoa, any colour

  • 2 cups water

  • 1 onion

    for the dressing

  • zest of 1 large lemon

  • 2½ tbsp lemon juice

  • olive oil

  • crumbled feta (goat cheese works well, too)

Steps

  • Sautee onion in olive oil salt and pepper. Quickly cook down the kale.

  • Cook the quinoa separately. When quinoa ready add to kale/onion mixture and mix together thoroughly.

  • Make a dressing of lemon juice, zest and olive oil to your liking.

  • Mix into quinoa mixture.

  • Add crumbled feta/goat cheese to top of each serving.
